Cody Cowgirl Casserole

  • 1 lb hot sausage, browned and drained
  • ˝ lb. bacon, cooked and diced
  • 12 oz frozen hash browns
  • 1 medium green bell pepper, chopped
  • 2 tbls chopped scallions
  • 2 cups shredded cheddar or Monterey jack cheese
  • 1 cup bisquick
  • 3 cups milk
  • 4 large eggs
  1. Oil a 9 x 13-inch glass baking dish. In a large bowl, combine the sausage, bacon, hash browns, bell pepper, scallions and 1 cup cheese. Spread in the baking pan.

  2. In another large bowl, whisk together the Bisquick, milk and eggs until blended. Pour over the potato mixture. Sprinkle with the remaining cup of cheese. Cover and refrigerate overnight (no longer than 24 hours).

  3. The Next Day
    Preheat the oven to 375°. Bake the casserole, uncovered, until light golden brown around the edges and the cheese is melted, 30 to 35 minutes. Let stand 10 minutes before serving.
