( Compliments of the Hacienda Manzanal Inn )
For 10 Servings you will need:
- 6 corn tortillas, cut into strips
- 1 7-oz can Diced or chopped green chilies
- 1 lb. hot pork sausage, cooked with ½ onion (chopped)
- 2-3 cups Mexican shredded cheese
- 10 Eggs
- ¾ cup of milk
- ¾ tsp. ground cumin
- ½ tsp. black pepper
- 1 tsp. garlic (minced)
Grease 9 x 13 baking dish. Layer half of tortilla strips, chilies, sausage and cheese. Repeat with other half. In medium bowl, beat the eggs, milk and spices. Mix well and pour over the above layers. Cover with plastic wrap and refrigerate overnight.
Next morning, preheat oven to 350°. Remove plastic wrap and bake for 45 to 50 minutes or until bubbling around the edges. Center should be solid. Garnish with sliced tomatoes.
