Fresh Fig Baked Custard
(From the Adobe Inn in San Luis Obispo, CA)
- 1 cup sugar
- 6 tbls all-purpose flour
- 2 ˝ tsps baking powder
- Pinch salt
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp bourbon or rum
- 1 cup chopped pecans or walnuts
- 1 cup diced and stemmed fresh figs
- 1 tsp grated fresh lemon rind
Preheat oven to 350°. In large bowl, mix sugar, flour, baking
powder, and salt. In separate bowl, beat eggs, vanilla, and
bourbon; stir into dry ingredients. Fold in pecans, figs, and
lemon rind. Mix several minutes or until well blended.
Pour into greased 8-inch-square baking pan. Bake 30 -35
minutes or until knife inserted in middle comes out clean; cool.
Cover and refrigerate overnight. Serve with cream or fresh
whipped cream if desired.
