Baked Eggs Over Sauteéd Vegetables
For each quiche pan you will need:
- Butter for cooking
- 1 very large onion – yellow, chopped
- 1 large bunch broccoli, chopped
- 2 large raw carrots, cut
- 1 red pepper
- dill, salt and pepper
- ½ cup cheddar cheese
- ¾ cup swiss cheese
Saute onions until almost done. Add
chopped broccoli and red peppers. Cook until broccoli is just
tender. Mix in carrots and set aside on.
Grate about ½ cup cheddar cheese and ¾ cup
Swiss cheese. Put mixture of cheeses on bottom of pan,
reserving small amount for top. Add drained, sautéed
vegetables on top of cheese evenly. Sprinkle rest of cheese on
top of vegetables. Make indentations in mixture – 8 around the
outside of pal; 2 in center. Carefully crack 10 eggs in each
indentation and add salt and pepper.
Bake covered for approximately 25-35 minutes.
Watch after 20 minutes very closely s the eggs can be overdone in a
matter of minutes.
